I'm buying 2 lb bags of Stokkebye's Proper English (manufacturers Sealed Foil Bag. Would I be better off leaving it in the original packaging or using mason jars?

If you intend to keep it for a year or longer and want some real aging, Larry is right: use Mason jars.
